This single vineyard sparkling wine was from Courabyra vineyard. The vineyard has an altitude of 730 metres with western facing slopes which provides good air drainage.
The soils consist of decomposed granite and the vineyard has an abundant water supply.
The property is fully maintained by hand, the Pinot Noir and Pinot Meunier vines are all cane pruned, whilst the Chardonnay vines are spur pruned.
The canopy is manipulated throughout the season, depending on weather conditions to allow dappled light which assists in the development of fine fruit flavours.
Parcels of fruit from all three varieties were selected to obtain a well balanced wine.
The grapes were hand picked and whole bunch pressed

Tasting Notes.
The 2001 sparkling wine base was put through a full malolatic fermentation. Then bottle fermented using the traditional method. The 2001 805 Courabyra Sparkling was put on tirage in October 2001 and disgorged in December 2011.
The blend is Pinot Noir 60%, Chardonnay 30% and Pinot Meunier 10%.
Alcohol; 13%
The 2001 still displays fresh citrus flavours, fig, nuts and warm bread. It has layered complexity from spending 10 years on lees. It has finesse, elegance and a persistent creamy bead. The result is a mature and complex sparkling wine that expresses the true qualities of the cool climate Tumbarumba terroir.
