NV Brut

The blend is 50/50 Chardonnay and Pinot Noir. The wines were individually barrel fermented before blending and have spent 3 years on Lees The colour is bright with a straw hue. The bouquet is fresh, displaying white blossom and citrus, but showing complexity that is mellow and biscuity from the time on Lees. Dominated by citrus flavours, the juicy lemon and grapefruit are balanced with the subtlety of white stone fruits and berries The bead is crisp, clean and of pure fruit flavours that you would expect to find in high altitude wines. It has a lovely dry finish.

Tasting Notes

The Blend is 50/50 Chardonnay and Pinot Noir. The grapes were hand-picked and whole bunch pressed. This wine base was put through a full malolatic fermentation. The wines were individually barrel fermented before blending and have spent 4.5 years on Lees. It was disgorged in August 2019. The dosage is 4g/l. The colour is bright with a straw hue. The bouquet is fresh, displaying white blossom and citrus, but showing complexity that is mellow and biscuity from the time on Lees. Dominated by citrus flavours, the juicy lemon and grapefruit are balanced with the subtlety of white stone fruits and berries. The bead is crisp, clean and of pure fruit flavours that you would expect to find in high altitude cold climate wines. It has a lovely dry finish.
